The lighting texture is included in the ringmats folder for each arena...

There is a texture named “lights”. Its a newer add so you may have to download the latest test version of the modpack.

EDIT: if you mean the entrance lighting, that cant be changed without doing it in the entrance craft. But arena lighting is editable.

That there's the newest release version of the Modpack; you'd need to grab the test version from the Modpack Testing Ground Discord server to have and use the _Lights file in each arena. However that's not what you're looking for anyways, if you're trying to fiddle with the lights coming off the pillars, as the _Lights texture only handles the lighting cast over the audience. As far as I'm aware there's no easy way to change the color of those pillar lights, and I don't believe Entrance Craft effects those; pretty sure they're just like the Arena de Universo and USA Grand Dome rainbow lights, totally independent of the other lighting effects. If you really dug deep in the resources.assets file with UABE there's almost certainly a file you could change to permanently alter those pillar lights, but I can't say I've found that one yet.

But it was mostly because I needed to put AWCW somewhere else, too (can't get rid of the LED wall in the WWE arena), so they ended up in SCS stadium. Which is just as well, because their home arena in FPR was the Shin-Kiba 1st Ring and SCS is about the closest I think there is to it in FPW

Anyway, I don't think they're quite done - the floor especially is still kind of a mess because it's mapped in about the dumbest way possible, but they're probably pretty close

Been dicking around with the last two arenas a bit more. Mostly re-doing the high and lowlights, but also softened up the mats so they look less like the ceramic tiles they are
And the floor's back to being a mess on the right
