Does it have anything to do with match rank?
It seems like I'll have long/exciting matches with edits I have ranked lowly and it will only get a rating in the 60s-70s, and then I'll have shorter matches that don't seem THAT interesting and it will get a 90+ rating

Rank determines how expensive their contracts are in Fire Promoter; Charisma determines the intensity of the pop an edit gets for taunting at least. The intensity of the pop is dependant on the difference between wrestlers in a match: IE: An E-Rank Charisma edit will get a greater pop against an S-Rank Charisma edit, than an A-Rank Charisma edit would get against a S-Rank Charisma edit.
I don't remember/recall if there's any other mechanics for these.
Also, Match Rating is dependant on arena, and what moves an edit performs. Those I don't really remember too well, unfortunately.
