So I know that the game system doesn't really have a fluid tag team style match. Any way to make edits that are specifically made for 12ish minute tag team matches?

As far as I know, it really comes down to, in order:
1 - their Logic settings as singles wrestlers
2 - their Skills and Parameters settings
3 - their Touchwork setting in the Logic section
I rank the Touchwork settings as 3rd because it really depends on what kind of team you want, whether it's one that frequently tags each other or one where each member can dominate or get dominated for a long time before tagging.
This is just my own personal opinion on it though, since the game itself doesn't really have any hard-and-fast rules for tag wrestlers.
Your mileage may vary.
