Damn, how have I not seen this thread yet?
I think most of my favorites have been mentioned already but I also wanted to add that Saturn's WWF theme (pre-siren) is pretty underrated. Tori also had a surprisinhly rocking theme back in '99.

Muta’s Old theme used to get me hype as shit! A big show at the Tokyo Dome or some other big event, Muta headed to the ring in one of his crazy ass outfits or even just the paint, and this theme playing. Throw in the announcers talking up the match, the crowd noise, man, good pro wrestling memories! And you don’t have a pulse if that shattering glass doesn’t at least get you close to red lining! Like him or not, and as shitty as some WWE in house made themes have been, Stone Cold’s theme is iconic and was perfect for his gimmick!
RVD’s WALK cover by Kilgore is one of my all time faves. ECW was so fun, lots of garbage matches and crap I didn’t care for, but RVD put on some fun matches, and that song got you stoked for the carnage between RVD and Sabu or Jerry Lynn that was about to occur. Great choice for such a high energy spot machine!

"Gangrel/The Brood"
"Ode to Freud" Mankind's first theme. I loved the omninous entrance and the piano exit.
"Muta Concerto" I also liked "Triumph" which was the Muto theme, but had a similar hook to the Muta Concerto.
"Honno No Fighter"
UWF/UWFi Theme
"Outbreak" Keiji Muto AJPW theme
"American Made" Hulk's WCW theme. I like this better than "Real American."
nWo Triumph. Muto's theme in nWo Japan
BJW's main theme
"J" Jumbo Tsuruta theme
"Heaven Knows" Osamu Nishimura NJPW theme.
